Granny Smith spring salad

Whether you’re entertaining for a group of people or you’re in charge of bringing a side salad to someone’s dinner party, this one is fool proof and so yummy! This salad is all up to you; add more or less of the toppings to make it your own and how you like it best. I use a mason jar for making dressings, and it’s so handy. Add all the ingredients and just shake! Just put the dressing in the fridge to chill before serving. Bonus: all ingredients you can find at your local grocery store. Enjoy a healthy (ish) recipe on me!

Servings: 6
5-ounce container of mixed greens
½ cup dried cranberries
1 cup crumbled sea salt bagel chips
½ cup gorgonzola crumbles
1 large Granny Smith apple

1 tablespoon honey
¾ cup Greek yogurt
½ teaspoon lemon zest
½ cup olive oil
1 ½ tablespoons mayo
½ teaspoon ground mustard
1 tablespoon poppy seeds
¼ cup sugar
¼ cup white wine vinegar
Small pinch of salt

Setting the Granny Smith apple aside, add all other salad ingredients to a large serving bowl. In a large mason jar, add all dressing ingredients, screw on lid and shake vigorously to emulsify the dressing. Place dressing in fridge to chill. When ready to serve the salad, cut thin slices of apple and toss in salad. Shake dressing again before tossing into the salad. Serve immediately.
