Sometimes a nice, sunny weekend calls for a zesty, fun lunch. That’s exactly what my family decided when we made our way to Carlos O’Kelly’s Mexican restaurant this past weekend.
We stepped out of the heat and into the cool, air conditioned entry way where we were greeted by a smiling hostess. In just a few seconds we were seated in a comfy booth around the corner, surrounded by festive decor, dim lighting and the smell of hearty, spicy food.
There was light music playing over head, and we could overhear the televisions playing in the bar area. Sunshine was streaming through the windows reminding us of the heat outside.
As we contemplated our menus, we dug into the hot, salty tortilla chips and fresh, cool salsa. I would be sharing my meal with my toddler, who is pretty picky when it comes to food, so I chose wisely. There were several taco, burrito and fajita options that sounded delicious and definitely enough for me to share, but messy nevertheless.
Then the fajita cheese crisp caught my eye, and I knew I had found a winner. It was described as a fried tortilla, covered in cheese and chicken and cut into pieces like a pizza. It sounded easy to eat with simple ingredients and big enough to share a few pieces.
When the waiter returned with our drinks, we ordered our main courses and continued to feast on chips while we waited.
Soon our meals came on large, piping hot plates. Mine looked like a delicious cheese pizza with big chunks of chicken peeking out under the melted cheese. One bite and I was hooked. The chicken was juicy, the cheese was flavorful and to top it all off, my toddler loved it. We dunked our “pizza” slices into salsa and nibbled happily.
