On a Sunday afternoon, my family and I wanted to go out for a late lunch. We decided to try Cabo Sol Mexican restaurant since we hadn’t been there yet. My husband couldn’t wait to dig into some chips and salsa.
Once inside, the hostess greeted us with a smile and showed us to a cozy booth right in the middle of the small restaurant. The decor was bright, pretty and reminiscent of a Spanish villa.
To start off, we decided to order some cheese dip to accompany our complimentary chips and salsa. With so many meal choices on the menu, it took me a little while to decide. There was a tempting page of seafood dishes, numerous combination dinners and lots of chef’s specials. In the end, I was torn between the chimichanga, carnitas or one of the combo meals. I finally decided on combination No. 13 with a chicken burrito, beef taco, rice and beans. I was able to choose my meat and what kind of shell I preferred. My husband chose the chicken fajitas.
As we waited for our meals, we were able to casually watch sports on one of the two flatscreen televisions close to our table. We munched on chips, cheese and the thick, yummy salsa.
Just in time, our dishes arrived. They were hot to the touch and piled high with warm, fragrant food. My taco was the first thing I delved into and I finished it quickly. My burrito was covered in thick, robust enchilada sauce and packed with shredded chicken. My refried beans were smothered in a thick queso sauce that was gooey and perfect mixed in with my rice. Even my toddler was happy munching on my beans, rice and burrito.
My husband devoured his fajitas faster than I could believe, which is always a good sign. Clearly satisfied with his choice, we paid our bill and started to leave. With a friendly goodbye from the hostess, we felt happy and full as we left the restaurant.Cabo Sol Mexican Restaurant
